You might ask "where have you guys been?", well...we were in Miami for the first ACC game of the year and maybe even couple of you watched it on TV. Yeah, it wasn't our best game maybe, but hey, you have to learn from every loss, right? The bright side is, I captured some amazing photos when we were flying there and back. Here are some for inspiration:
Okay first one is the best dinner I have had for a long time. Me and my friends cooked chicken and papaya quesadillas (yes I looked it up to spell it right, don't judge people), sweet potato fries, and strawberry poppyseed salad. Since my friend Marybeth used to work at Panera she had the real deal Poppyseed dressing they have, yummy! This is so delicious but yet so easy. You have no excuses not to try.
We bought already cooked rotisserie chicken, shredded it into little pieces, and put between two whole-wheat (duh!) tortillas with diced papaya, bell peppers (from my friends' organic garden) <-- bonus points , and some cheese, and pressed until it cooked.
For the salad simply toss greens (organic too), strawberries, feta cheese, walnuts and add the dressing on it.
And the sweet potato fries are pre-cut frozen ones that you can find in the grocery stores, Bake them according to the package, and you get a healthy side dish in a blink.
The breakfast was scrambled eggs with the leftover bell peppers we used yesterdays dinner, mushrooms, and a tiny bit of olive oil.
On the side, I had greek yogurt/lemon muffin (I will share the recipe later), and greek yogurt with leftover papaya and granola. You can also spot my coconut water, I am obsessed with it. I love every kind, but of course, Zico's chocolate one is simply AMAZING!
And this is the dinner, me and my roommates cooked. You can see the sweet potato fries again, and the salad with avocados, mangoes, raspberries, and candied pecans. Also we made some tomato and mozzarella salad with balsamic and olive oil, it is caprese salad minus the basil. Also ninjas need some good source of carbs to fuel up, so we cooked some couscous with shredded mozzarella and steamed veggies. Whenever it is about food, ninjas/athletes have no patience, I promise, we do not want to wait a minute to eat as soon as we are done with the practice. If we can find the courage to cook instead of dining out, or getting fast food, you can also do it. None of these meals took more than 45 mins, so get you butt up and do some work.
